Hummingbird Muffins

Makes approximately 16 mufins

Ingredients:

3 cups flour
2 cups sugar
1 tsp baking soda                                
1 tsp salt
1 tsp cinnamon
3 beaten eggs                                      
1 cup vegetable oil
1 ½ tsp vanilla
8 oz crushed pineapple                                 
1 cup chopped pecans
2 cups mashed bananas

 

Directions:

Preheat oven to 350 F.

In a large mixing bowl combine dry ingredients.

In a small bowl combine eggs and oil; add to dry ingredients..

Mix together vanilla, pineapple, pecans and bananas; add to muffin mixture. Stir well

Grease muffin tins and fill full, bake at 350 for 25 – 35 minutes.

Transfer to a wire rack and let cool for about 10 minutes before removing from pan.
